Tonight's Dinner: Cream of Fresh Tomato Soup


I watched an episode of "Barefoot Contessa" today and was inspired by the herbs she used. The recipe that was featured in the show was her cream of fresh tomato soup, which I plan on making for dinner tonight. I don't have any carrots to use, so I'm going to try it without. Hopefully it won't be one-dimensional. I also don't have a food mill, but I'm planning on blending it up in a food processor and then straining it. I'm not big on the tomato seeds. I'm also planning on taking a photo of it and posting it as soon as I'm done so you can check it out. The recipe is pretty straightforward. In some of my classes, the recipes have you do tomato concassé (where you boil the tomatoes first, shock them in ice water, and then peel and take out the seeds). Extra steps. Extra Dishes. Blah. That's why I'm planning on blending it and then straining it. Less work.

A Little About Ina Garten:
Ina Garten is great. She's like your favorite aunt that spoils you senseless. I love her. I think her ideas are classic, her dishes are great, and she's just an all-around upbeat person. When I watch her show, I feel like she's welcoming me into her house, showing me around and making me feel as though I belong there. It's great. The show is awesome. I also have one of her cookbooks, Barefoot Contessa at home. Easy recipes. I'm looking to try that Green Goddess dressing before summer is over.

  1. Photo is up! The dish was pretty good, despite not having carrots in it. I also didn't have any tomato paste, so I used pizza sauce instead. My advice: use more tomatoes than you think you need. My soup tasted more like chicken stock than a strong tomato soup. The tomato paste probably would have made a bigger difference. But it was really easy. Even if you don't have a food processor, use a blender and strain it out if you don't like the seeds. All in all, a pretty darn good soup, and a good use of all the tomatoes that are growing in my garden.
